This copycat recipe adds my own spin on this beloved soup—rich, creamy, and brimming with tender chicken, pillowy gnocchi, and fresh vegetables.
Ingredients
- 1 tbsp Olive Oil
- 2 tbsp Butter
- 2 stalks Celery, chopped
- 1
Carrot , julienned - 1 small Onion, diced
- 1 clove
Garlic , minced - 4 cups Chicken Broth
- 2 cups Chicken, cubed
- 1 tsp thyme
- 8 oz Gnocchi
- 2 cups Heavy Whipping Cream
- 1 cup
Spinach , chopped - Salt and pepper to taste
- ½ cup Flour
Prep Time: 10 minutes
Cook Time: 45 minutes
Total Time: 55 minutes
Olive Garden Chicken Gnocchi Soup Recipe
- Add olive oil and butter to your Instant Pot or pressure cooker on the sauté setting.
- Once the butter is melted, add in the celery,
carrot , onion, andgarlic . - Stir in the chicken broth and let simmer for 5-10 minutes, until the celery and
carrot are soft - Add the chicken and thyme. Salt and pepper to taste.
- Switch to soup mode and cook for 10 minutes.
- Add in the gnocchi, heavy whipping cream,
spinach , and flour. - Pressurize your
Instant Pot and cook for 5 minutes. - De-pressurize the
Instant Pot and enjoy!
