  1. Place the lid on the mason jar. Please give it a gentle shake to distribute the rosemary evenly.
  2. Sit the jar near a window. Allow it to sit and infuse for 2-4 weeks. During this time, give the jar a gentle shake every few days to enhance the infusion process.
  3. Once it is infused, you may want to strain out the dried rosemary. You can do this by placing a cheesecloth or strainer over the mouth of the mason jar.
  4. Pour the rosemary olive oil mixture over the strainer to let the olive oil through, and keep the rosemary pieces on top. You will need a second mason jar or container for this part.
  5. Press down on the rosemary remnants with a spoon or spatula to extract any remaining oil.

We opted to keep the rosemary in for a little while longer.

How to Speed Up The Rosemary Oil Infusing Process

If you want to speed up the process, you can use the stovetop method. With the stovetop method, here’s what you’ll need to do:

Fill a small pot about 1/3 full with water. Place the prefilled mason jar with rosemary and oil in the water. Do not place the lid on it. Be careful, as it can tip over.

Place the stove on low heat for about an hour. Be careful taking the mason jar out, as it will be hot. Then proceed with steps 5-7.

Wait until the jar has cooled and place the lid on.
