These classic French madeleines offer a soft, delicate texture and a hint of vanilla that will charm you and your loved ones. Madeleines are small, shell-shaped sponge cakes known for their unique shape and nostalgic allure, famously described by Marcel Proust.

Today’s recipes maintain the classic foundation but allow for creative twists, from flavor variations in the batter to decorative coatings. Some recipes even pair madeleines with buttercream or a lemon glaze for added sophistication. You can create these elegant and timeless treats right at home with a few simple ingredients.

Ingredients:

  • 1 hen’s egg 
  • 1 1/2 tablespoons white sugar 
  • 1 1/2 tablespoons brown sugar 
  • 3 1/2 tablespoons flour 
  • 2 1/2 tablespoons melted butter
  • 1/3 teaspoon vanilla extract
  • Salt

Instructions

  1. In a bowl, whisk the egg, then add the salt, white and brown sugar, and vanilla extract. Beat with a mixer on medium speed for about three minutes until the mixture turns pale and doubles in volume.
  2. Gradually sift in the flour and mix for a couple more minutes until combined.
  1. Melt the butter in the microwave and allow it to cool slightly before pouring it into the batter. Stir gently to combine. You should have a thick, smooth batter resembling condensed milk in texture. Cover the bowl with plastic wrap and chill in the refrigerator for 30 minutes.

  1. After chilling, spoon the batter into silicone molds, filling them just below the top. Bake in a preheated oven at 356°F for 10-12 minutes or until the edges turn golden.

Let the madeleines cool on a rack before decorating as desired.

We dipped one corner in chocolate and added a sprinkle of pink heart decorations.
