- 3 cups chicken or vegetable broth
- 2 cups broccoli florets
- 1/4 cup cream
- 1 cup grated cheddar
- 3 tbsp grated Parmesan
- 1 onion chopped
- 1 carrot chopped
- 1 celery stalk chopped
- 2 tbsp all-purpose flour
- 2 garlic cloves chopped
- 1/3 tsp salt
- 1/3 tsp pepper
- 1 tbsp butter

How to Make Broccoli Cheddar Soup
- In a large pot, melt butter over low heat. Add chopped onions, carrots, and celery and sautƩ for 5 minutes.
- Add garlic and continue to cook for an additional minute.
- Add in the all-purpose flour and stir well to combine. Continue cooking for 2 minutes, stirring constantly to prevent burning.
- Gradually add a small amount of broth, stirring to dissolve flour lumps. Once smooth, add the remaining broth and cream.
- Season with salt and pepper, and let the soup cook for an additional 2 minutes.
- Incorporate the broccoli florets and most of the grated Parmesan into the pot (reserve a small amount for garnishing). Cook for 10 minutes until the broccoli is tender.
- Remove a portion of the broccoli florets and set aside for garnish. Use an immersion blender to puree the soup in the pot until smooth. Return the reserved broccoli to the pot.
- Add the remaining shredded cheddar cheese to the soup, stirring until the cheese is melted and well mixed. Cook for an additional 3 minutes.
- Once the soup is complete, serve it in a bowl and top it with small amounts of shredded cheddar, parmesan, and fresh herbs.
