I’ve always loved pears, and luckily, they’re a favorite with my kids too. That’s why I’m always experimenting with new ways to enjoy them, and this Roasted Pear Salad with Lemon Vinaigrette is definitely a winner. The best part? It’s incredibly simple to make.

Ingredients

for the Salad

  • 3 pears (somewhat firm – Avoid using fully ripe pears, as they can become too soft after roasting)
  • 1 Tbsp olive oil
  • 1 Tbsp maple syrup 
  • 6 cups spring mix
  • ½ shallot, sliced 
  • ⅓ cup goat cheese
  • ½ cup glazed pecans
  • ⅓ cup dried cranberries 

for the Dressing

  • 2 Tbsp olive oil
  • 2 Tbsp lemon juice
  • 1/2 tsp Tbsp dijon mustard
  • 1 Tbsp maple syrup 
  • ¼ tsp salt
  • ⅛ tsp pepper

Servings: 4 -6 side servings 

Prep: 10 minutes | Cook Time: 12 minutes | Total Time: 22 minutes

Directions:

  1. Preheat your oven to 400°F and line a baking sheet with parchment paper.
  2. Slice the pears into ¼-inch pieces and place them in a bowl. Drizzle with 1 tablespoon of olive oil and 1 tablespoon of maple syrup, then mix until the pears are evenly coated.
  1. Arrange the pear slices in a single layer on the baking sheet and bake for 12 minutes.

  1. While the pears are baking, prepare the dressing by whisking the ingredients together in a small bowl.
