Servings 6 Scones

Equipment

  • 9×11 Baking sheet
  • Parchment Paper

Ingredients

  • 2 cup flours
  • ¼ cup white granulated sugar
  • cup brown sugar
  • 1 tsp baking powder
  • 1 tsp baking soda
  • ½ tsp salt
  • ½ cup unsalted butter cold and cubed
  • 2 tbsp poppy seeds
  • ¼ cup lemon juice
  • ¼ cup milk
  • 1 tsp vanilla extract

Topping before oven:

  • Extra Tablespoon of butter melted
  • Extra white sugar

Frosting:

  • Lemon glaze

Instructions

  • Prep a baking sheet with parchment paper. Then, Preheat the oven to 400 degrees Fahrenheit.
  • Add the flour, brown sugar, white sugar, baking soda, and baking powder in a medium-sized mixing bowl. Whisk until the dry ingredients are combined.
  • Add in the cubed butter and use clean hands to squeeze the butter and dry ingredients together to create a crumbly mixture.
  • Mix in the poppy seeds.
  • Add in the egg, lemon juice, milk, and vanilla extract, and mix together until a dough forms.
  • On a clean, flat surface, transfer the dough to it and form a round of the dough to about a 10×10 inch disc. Cut the dough into six equal pieces. If the dough seems a bit sticky before cutting, add about a ¼-½ cup more of more flour to the dough.
  • Transfer these six pieces to the prepared parchment covered baking sheet.
  • Take the tablespoon of butter thats melted and brush each scone with it and sprinkle some white sugar on top.
  • Place in the preheated oven and bake for 10-12 minutes or until the tops of the scones are slightly browned.
  • Top the scones with a lemon glaze of your choice and finish with lemon zest for garnish.

Notes

The best and easiest way to store your scones is to place in a tightly sealed container at room temperature.
