Easy Homemade Spicy Pickle Recipe

- 3 cucumbers
- ½ tsp salt
- ½ tbsp sugar
- 4 tbsp apple or white vinegar
- 4 tbsp water
- 1 tsp turmeric (can be omitted)
- 1 tsp nutmeg
- some leeks
- 1 tbsp grain mustard
- ⅓ chili
- 1 bay leaf
Wash the cucumbers and pat them dry with a cloth. Cut them into circle slices.
Remove the seeds from the chili and slice it into circles. Chop the leeks.
Place the cucumbers and dry spices in a microwave-safe bowl. Pour in the water and vinegar—microwave on high for 3.5 minutes.
Carefully stir the contents of the bowl (it will be hot) and microwave for another 3.5 minutes.
Allow the cucumbers to cool for 10 minutes. Then, add the onion and chili. Stir to combine the flavors.
