Homemade spicy pickles offer a quick and easy way to add a kick to your meals. Ready in just 15 minutes using the microwave, there’s no need to wait for the flavors to develop—they’re ready to enjoy as soon as they cool down. Perfect for topping burgers or adding to salads, these pickles are a game-changer.
Packed with bold flavors and spices, this recipe requires only fresh, crisp pickles, which you likely already have in your fridge. Spice lovers can customize the recipe by adjusting the amount of chili peppers or opting for spicy mustard.
Ingredients for Homemade Spicy Pickles
- 3 cucumbers
- 1/2 tsp. salt.
- 1 tbsp. sugar.
- 4 tbsp. apple or white vinegar
- 4 tbsp. water
- 1 tsp. turmeric (can be omitted)
- 1 tsp. nutmeg
- some leeks
- 1 tbsp. grain mustard
- 1/3 chili
- 1 bay leaf
How to Make Spicy Pickles
- Wash the cucumbers and pat them dry with a cloth. Cut them into circle slices.
- Remove the seeds from the chili and slice it into circles. Chop the leeks.
- Place the cucumbers and dry spices in a microwave-safe bowl. Pour in the water and vinegar—microwave on high for 3.5 minutes.
- Carefully stir the contents of the bowl (it will be hot) and microwave for another 3.5 minutes.
- Allow the cucumbers to cool for 10 minutes. Then, add the onion and chili. Stir to combine the flavors.
Transfer everything to a clean jar or serving dish of preference. For even cooking, it’s best to follow this portion size. If you change the portion size, adjust the cooking time. These pickles are just as tasty as traditionally cooked ones.
How to Store
Store your pickles in sterilized jars with airtight lids to prevent spoilage.
Keep the jars in the refrigerator to maintain freshness and extend shelf life.
Homemade pickles can typically last for several weeks to a couple of months when stored properly.
