How to Make No Bake Cheesecake Cups

This easy recipe brings you the creaminess of cheesecake without any baking. The simple mix of almond meal, maple syrup, and cashew butter for the crust and a creamy blend of cottage cheese, Greek yogurt, and vanilla for the filling makes a delightful combination.

Ingredients
  

Crust

  • ½ cup almond meal
  • 1 Tablespoon maple syrup
  • 1 Tablespoon cashew butter

Cream

  • ½ cup 2% cottage cheese
  • ½ cup plain 2% Greek yogurt
  • 2 Tablespoons maple syrup
  • 1 teas vanilla bean paste

Toppings

  • Peaches

Instructions
 

  • First, mix almond meal, maple syrup, and cashew butter together with a fork until the mixture becomes crumbly.
  • Firmly press this crumble into the bottom of a small jar or serving cup, setting aside about 1 tablespoon of the mixture for later use as a topping.
  • Combine cottage cheese, Greek yogurt, maple syrup, and vanilla extract in a separate bowl. Use an immersion blender to smooth this mixture until it's creamy. If you don't have an immersion blender, a standard blender or food processor will work just as well.
  • Pour this creamy filling over the prepared crumb crust in your jar or cup.
  • Decorate with peaches or your choice of toppings, such as fresh fruit, and sprinkle the reserved crumble mixture on top for added texture.
  • While these no-bake cheesecake cups can be enjoyed right away, they taste even better after chilling in the refrigerator for several hours, although this step is optional.
