Ingredients
- 3/4 cup granulated sugar
- 1/3 cup vegetable oil (you can also use liquid coconut oil)
- 1/4 cup milk (almond milk is fine as well)
- 2 teaspoons vanilla extract
- 2 ripe medium sized bananas, mashed
- 1 1/2 cups all-purpose flour, scooped and leveled
- 2 teaspoons baking powder
- 1 cup diced strawberries
Glaze
- 1 cup powdered sugar
- 2-3 tbsp heavy cream
- 1 tsp vanilla extract

Instructions for the Cake:
- Preheat the oven to 350°F.
- Grease an 8×8-inch baking dish with nonstick spray.
- Whisk together granulated sugar, oil, milk, and vanilla in a large bowl.
- Add the mashed bananas and stir to combine.
- Sift in the flour and baking powder. Use a rubber spatula to gently fold and mix the ingredients.
- Add the strawberries just before all of the flour is fully incorporated. Stir until just combined, being careful not to overmix.
- Pour the batter into the prepared baking dish.
- Bake for 40 minutes. Remove from the oven and let cool.
Instructions for the Glaze:
- In a small bowl, combine powdered sugar, vanilla, and heavy cream. Stir until smooth.
- If the glaze is too thick, add a teaspoon of heavy cream at a time until it reaches your desired consistency.
